Vegan Mac ‘n Cheese: Comfort Food with a Twist!

Hey there, food lovers! 🌱 Today, I’ve got a delicious and fun recipe to share with you: Vegan Mac ‘n Cheese. This is not your regular mac ‘n cheese – it’s vegan and packed flavor, making it the perfect comfort food that you can feel good about eating. Plus, it’s super easy to make. Let’s dive in!

Ingredients:

1 lb Elbow Pasta

2 LeeksAbout

2 cups of Tomatoes

2 tbsp Dijon Mustard

1 Packet Daiya Deluxe Cheese Sauce

1 tbsp Olive Oil

2 tbsp Minced Garlic

Arugula

Lemon

Salt and Pepper to taste

Instructions:

Boil! Start by bringing a pot of water to a boil, and don’t forget to salt the water! While you’re waiting for the water to get bubbly, let’s prep those veggies.

Chop, Chop! Grab your leeks and tomatoes. For the leeks, cut off the top dark green part and the bottom root. Slice them in half lengthwise, then chop them into half circles. As for the tomatoes, if they’re small, quarter them. If they’re larger, dice them into pieces about the size of a macaroni noodle.

Quick joke interlude: We are a family of Dad Joke lovers, the cornier the better. Am I right? Well, EVERY time we have leeks in the house my son yells across the house “Mom, there’s a leek in the fridge!” 😂 We don’t use leeks often so the joke doesn’t dry out.

Pasta Time! Once your water is boiling, add the pasta and cook for 8-12 minutes, until the pasta is tender but not mushy. No one likes mushy pasta, right?

Sauté to Perfection While the pasta is cooking, heat the olive oil in a medium pan. Add the leeks and cook, stirring occasionally, until they are soft. Then, add the tomatoes and garlic, cooking until fragrant and delicious. Set this mixture aside for now.

Combine and Conquer When your pasta is done, drain it and put it back in the pot. Mix in the sautéed leeks, tomatoes, and garlic. Add the cheese sauce and return the pot to the stove for a minute to warm everything up. Be careful not to burn the sauce!

Season and Serve Finally, add a hand full of arugula to each plate and squeeze a bit of lemon on top. Season your mac ‘n cheese with salt and pepper to taste. You’re ready to serve.
