Broccoli Salad

This broccoli salad is super versatile! You can easily make it vegan by using vegan mayo and sour cream (or coconut yogurt). The soy-based bacon bits give it a delicious smoky flavor without any animal products. If you’re not following a vegan diet, feel free to use regular mayo, sour cream, and traditional bacon bits. This way, the recipe works for everyone and every preference. Enjoy this tasty Broccoli Salad your way!

Ingredients:

  • 4 cups fresh broccoli florets, chopped into bite-sized pieces
  • 1 cup shredded cheddar cheese
  • 3 or 4  green onions, chopped
  • 1 cup shredded carrots
  • 1 cup vegan mayo
  • 1 cup vegan sour cream or vegan coconut yogurt
  • About 1/2 cup bacon bits (soy-based)
  • Salt and pepper to taste

Getting Started

Prepare the Ingredients:

  • Wash and chop the broccoli into bite-sized florets. Pro tip: Save the broccoli stems for soup or veggie broth to limit waste.
  • Peel and shred the carrots.
  • Wash and chop the green onions.

Assemble the Salad:

In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, green onions, shredded carrots, and bacon bits.

Add the Dressing:

Add the mayo and sour cream to the broccoli mixture. Toss everything together until the broccoli is evenly coated with the dressing.

Season:
