Mother’s Day Brunch

Show off to Mom with this easy brunch

What better way to celebrate Mom than by making her a homemade meal? Don’t worry you don’t have to be a culinary expert to whip up something that will impress her. If she cherished those macaroni necklaces you made in kindergarten, imagine her reaction to a homemade brunch.

Waffle Bar

“Who doesn’t love options? The best part of any food bar is the different toppings, right? Mix and match to your heart’s content! This bar is pretty basic so lets get started.

The Waffles

First things first – waffles (obviously). You can opt for frozen or if you feel like you have the skills pull out that waffle iron and get mixing. Box waffle mixes are pretty straightforward just follow the directions on the box. Now that your waffle mix is ready, heat your waffle iron and give it a good spritz of cooking spray. Use a ladle ( that weird spoon mom uses to serve your favorite for chicken noodle soup) to pour mix into the waffle iron, close the lid and wait for the light. Continue until your mix is gone or until you have enough for the whole fam.

This step took my son an hour to make waffles for eight. But that’s why we are making brunch, right?

No need to rush, give her a coffee or a “Momosa” while she waits.

The toppings

We are keeping this waffle bar simple with strawberries, blueberries, raspberries, whipped cream, maple, and chocolate syrup. Feel free to make it your own by substituting other toppings. You can use sprinkles, caramel, strawberry syrup, nuts, or any kind of fruit you like.

Now you need to prep the fruit. Make sure you wash it, we use a vinegar-water mixture. Once everything is washed put each fruit in a separate dish or grouped together on a plate.

The icing on the cake

Well, the whipped cream on our waffles.

This homemade whipped cream will take your easy waffle bar to the next level. Deep breath – it’s easy, but shh, don’t tell your mom I said that.

In a mixing bowl pour in half a pint of Heavy Whipping Cream. Add 4 tablespoons of sugar and 2 teaspoons of vanilla. Using a hand or countertop mixer, beat on high until it starts to resemble the consistency of whipped cream (this is called “stiff peaks”). And just like that, you have whipped cream.

See, wasn’t that easy?

Brunch is served

All that’s left is the maple and chocolate syrup, you can squeeze some into a small dish or just put the squeeze bottles on the table.

That’s it your done! It’s just as easy as making that macaroni necklace.

Now take a seat with Mom and enjoy this simple but delish meal you have just made. You both deserve it!
